Ingredients : -

Atta 1 cup
Sooji 3 tbl spn
Sugar 3 tbl spn
Oil 2 tbl spn
Crushed cardamom 3 to 4.
Half tea spn crushed saunf.
2 tbl spns fresh grated coconut
6 chopped cashew nuts.

Mix the above ingredients and make a stiff dough.
Cover with a wet cloth for 20 mins.

Knead again and roll out on a board to a medium biscuit thickness. Cut with a cookie cutter. I used a tart mould with a sharp edge. With a sharp pointed knife make a leaf like design so the thekuas don't puff up.(u can use a sharp metal lid of a bottle which cuts through).

Heat oil in a kadhai. Lower the heat and Deep fry the thekuas on slow fire till golden brown.
Cool and store in an air tight container.
Makes about 10 nos.
